Call me Garfield because I could smash this entire pan. Sure, lasagna is better when you load it up with meats but everyone needs a meat-free meal every once in a while. One time I went vegan just to see what it was like. It wasn’t fun! So I stopped.
Jarred marinara came in clutch for this because I was in a pinch, but you can make your own as well. I’ve got a sauce recipe around here somewhere if you’re looking for one.
Throwing in some zest and citrus in this was a nice touch, making it the perfect summer meal.
Did you know? You don’t have to boil your lasagna noodles before making lasagna. In fact, when you do, it often leads to your lasagna being watery. You can just assemble the lasagna, cover it, and the heat will steam/cook the hard pasta in the oven, so long as you use enough sauce. It doesn’t even have to be the special noodles. You really do learn something new every day.
