Everyone knows about banana bread, but only the real ones know about zucchini bread. This is a big thing in the midwest where zucchini grows to be like ten pounds and is abundant in the summer.

My father in law bakes like ten of these at a time and throws them in the freezer, so when his grandkids stay the night he just thaws one out and they think it’s fresh because kids will believe anything. Genius, really.

Give this a shot and serve it to your family on a Saturday morning. It’s especially good when you toss a slice onto a buttered griddle for a couple minutes on each side.
